Signature Iberico Ham
Always seeking the most unique Iberian Hams, our quest led us to Jose Simon from Dehesa de los Monteros. Jose and his family run an exclusive production of Iberian pigs in the luxurious dehesas of Andalusia, near Ronda.
12 years ago, his family decided to make a different ham by introducing locally grown chestnut in the pigs' diet right before the "Montanera" (acorn feeding period).
The unique blend of chestnuts and acorns brought forth a very distinct Iberico ham of unparalleled nuance and sweetness. The distinct touch of chestnut, limited production (1400 hams per year) and extreme care for quality make our chestnut-fed Iberico ham the pinnacle of our selection.
